Hong (洪) was a Chinese chef who operated a noodle store in Obama within the Wakasa Province of Japan during the late 16th century.[1] Having settled down in the city after leaving the tea trade in the Abbasid Caliphate, Hong's noodles gained him much attention from the local Japanese, with many traveling from afar just to taste his noodles.[2] Hong also became acquainted with the daimyō Niwa Nagahide, serving as one of his informants.[3]

In June 1582, Hong met the kunoichi Fujibayashi Naoe and the samurai Yasuke, who had been directed to his noodle store by Nagahide to gather information on those responsible for the massacre of the Niwa clan. After serving the pair noodles, Hong deduced that they had been sent by Nagahide when Yasuke recited the codeword "mian", and told them about a group of pirates led by Samemaru who were terrorizing the people of Wakasa and had likely been involved in the Niwa clan's massacre. He also revealed that Nagahide's surviving relatives in Tsuruga would likely be targeted next, thus providing Naoe and Yasuke with two leads to investigate.[4]
Sometime after eliminating Takeda Motoaki, the Shinbakufu member responsible for the attacks against the Niwa clan, Naoe and Yasuke returned to Obama and visited Hong at his store. Telling the pair about his desire to expand his business and serve more than just noodles, Hong asked for a favor and handed them a list of various ingredients that could be found across Japan. Naoe and Yasuke subsequently gathered all the ingredients, allowing Hong to expand his cuisine.[5]
