I have seen a handful of concept art pieces by Ubisoft artists that have worked on the AC series. Japan and China would work very well and not be the typical ninja nonsense.

This artwork is by Gilles Ketting, who worked on ACR and is again not official and is his own personal work.

While there is also other fan based art that inspires just as much as anything done by the professionals at Ubisoft.

Remember that none of these are official and are taken from the personal works by artist on the AC franchise. Finally, I am trying to locate one last set piece concept art by a Ubisoft artist that focuses on Asia and it is truly mind blowingly good. Though he may have removed it due to the hysteria surrounding the location in which AC3 was to be set....
