According to Ubisoft, we play ourselves in the most recent games. Each and every one of us is an Initiate. So, all together, we're the Initiates. The fact that we cannot play with the others or see them or talk to them or whatever, does not mean that they don't exist. Now, for a quick grammatical run-down of the reasoning: the possessive of the singular is Initiate's, but since the article is about all Initiates, and not just a single one, we use the possessive of the plural, which is Initiates'.
