The Assassin's Creed games (at least the Animus portions) take place at roughly 300 year intervals, so AC3 will probably be set in the late 17th to mid 18th century. AC3 will definitely be set during an important time during that period, probably during the exploring and/or colonization of the new world, a.k.a. America.
