A lot of people suspect Shoa Jun was responsible for poisoning Ezio, intentional or otherwise. Some suspect that, when Ezio grabbed Shoa Jun, her little poison darts (under her hand) pierced his skin. Later in the video, you can see how one of Shoa Jun's darts is bloody, despite her not using any of them. It sounds rather far-fetched, but it's possible that Shoa Jun's poison was simply slow-acting, not meant for quick kills and distractions, in comarison to Ezio's poison darts.
