With regard to hunting, you can kill any animal because its fun, but the animals you want to kill more than anything else are beavers and bears (while bears are obviously harder to kill, beavers will literally sit down in front of you), you can find a bunch of beavers in the homestead by the river, and bears are plenty down by the water in John's town, next to the entrance into the homestead. When you kill them, send their pelts as convoys (naval convoys are much better), you can easily get 10000 pounds with them.
Combat is simple, I wont go into it since its explained below, but fighting with the tomahawk has been one of my highlights for this past month.
Naval missions are really fun, the only thing i didnt like about them were the optional objectives (which kinda destroyed the freedom of the whole game in a way). Use your swivel cannons against the smaller vessels, and fire when the marker is red, it will usually result in a one-shot kill. As soon as you can, buy the fire cannons, if youre close enough, you can take out a larger ship with one round. Last thing, keep a lookout on both sides of the ship at all times for rogue waves and other ships firing (hughlighted by a red area in the water). When another ship is preparing to fire, wait a couple seconds and then press square to minimize damage.
