Well if Ezio had died, here what would likely happen:

Rodrigo would have the Apple and the Staff but would not be able to open the vault, likely he would pass the relics to Cesare.

Rome would be corrupted by the Borgia for a loooong time.

Monteriogioni would eventually be attacked and few citizens would be able to escape and would face a massacre, without Ezio to help them, the Italian Assassins would have been destroyed

Constantinople would have be conquered by the Byzantines and the Templars, they would likely destroy the Ottomans Assassins too.

Without Ezio there would be no Apprentices to do missions and liberate cities, which would be in Templar`s hands for a looooong time too.

Conclusion: The Templars would take control of most Europe and some parts of Asia and anniquilated the Assassins there.
