Assassin's are not a race.

They are a group. Most of the time Assassins are born into the group but some join from outside of the chain. Ezio has resistance to the Pieces of Eden simply because Altair had it. It is obviously a Genetic factor that makes less of the control Neurones so in theory, Desmond also should have this resistance (as should have Subject 16).
