from what i picked up on in the vid, all the mohawk people in the game will be speaking in their native tounge and when connor is conversing with them he is also using the native tounge(as you would expect from one born into the tribe), the subtitles were there to allow us to know what they were saying (as subs are usually used in movies with multiple languages), this is in direct contrast to the other games where the animus translated (almost)everything to english for us with the subtitles not necissary for the most part.
