I'll say this again; samurai are not an organization. Samurai is a way of life, practicioned by numerous warriors serving numerous warlords. Ninja are not a singular organization either, and they also served numerous warlords.

In no way can all ninja be Assassins and all samurai be Templars.

But my vote goes out to Feudal Japan as well, being so in love with the time period.
