If you mean in its entirety then I have a problem. There are very few games where I can finish it 100% several times without getting bored. Sometimes the gameplay and story is amazing but the collectibles, sound tracks and slow pacing of the game make it super long and boring. So if I had to choose, it would be Assassins Creed 3. It goes against what you said, I know, but I can't think if any other game where I am willing to complete it and have fun at the same time. Cause the repetitive side missions are actually bearable due to the sound effects, the weather, the infinite ways of executing your enemies. Or maybe its simply the ability to run with aim mode on which makes moving so much more epic. I could do without the random club missions though...
If we are talking in terms of pure gameplay without the revealing of the map or getting all the collectibles, then Far Cry 3 is a good candidate. If there was a way to redo all the outpost captures after finishing the game, or replay all the missions without having to do anything else, then it would beat AC. Cause AC would get repetitive since the AI is always at the same place usually, but in Far Cry 3 you never know what to expect when confronting the enemy and its just so damn fun to use take-downs. Hitman Absolution is good but the score you get at the end of a level makes you disappointed, so it loses in that regard.
Oh, and if the above don't cut it, then Crysis 2 would be a good one. Even if you disregard the collectibles(like I did) the gameplay and story is enticing. If only they had chained take-downs, that would have made things so much quicker.
