For me it depends on the time as well as the equipment, and I realise that the rules are supposed to make it "fair" but they don't. Most of the names on the list lived in totaly different times, so you can't have Edward pull a gun on Altair, or Connor plant a tripwire bomb on Ezio. On the other hand, if you take all but their very iconic melee weapons, you rob some of them of years of extra training.

Timing is also important. When you say "in their prime" do you mean their physical prime (20 - 30)?, or the prime of their skills and deadliness ?

I will try my best to narrow down these factors in order to give an answer. For example (only for Connor Ezio Altair Haytham Aveline and Edward, I don't know much about the others) consider everyone fighting with swords exept Connor who fights with his tomahawk and blade.

If all of them were 15yo Connor would best them all, with Altair 2nd and Ezio dead last. Connor took down Bears, and killed armed thugs at 13. Actually up until his 20s he is the best on the list, and for a good portion of the game he is clearing forts solo while still a teenager.

If all of them were 25yo Altair could win, with Haytham and Connor fighting for 2nd and 3rd and Edward last. Here is where the equipment comes to play, Altair was tearing through waves and waves of soldiers in Arsuf with only his basic weapons, but all his life he was training on these weapons to master them. He is without a doubt the best swordsman on the list.

If all were 45yo and over, Ezio would kill them all (with the obvious exeption of Connor who we know nothing about). Haytham and Aveline fight for 2nd and 3rd and Edward last. For me Ezio was kind of a slow starter compared to the rest, Connor in his teens was an animal and everyone else was training from a very young age. Ezio though never stopped, his story continued until he was like 53, and compared to a 53yo Altair Ezio is a clear winner. Maybe Haytham could provide a chalenge, but the time he spent training with firearms and muskets is a disadvantage against a swordsman like Ezio.
