The reason they didn't have the crossbow in the first game is because it wasn't historically accurate. Altair did have a crossbow in the opening scene, but it was removed later on. He did have one in the DS game (Altair's Chronicles), but that is a prequel to the first game, so I don't know why he has one then. But the one in the opening scene didn't look all that big to me.
