Picking up the "cities in the middle east" part: In terms of how people from places like let's say Syria look: Some look like your "typical" turkish people with a skin that is a little bit darker, and some look like they come from Central Europe. Since I'm not a historian I got no clue why it is like this. I guess the constant battles for "the holy land" influenced this, yes? So you know, Ubisoft could just decide that using a wide variety of ethnic groups (and so on) for their soldiers. Which would be quite interesting.
