Something tells me you didn't listen carefully to in-game characters. In ACB the Grand Temple isn't even mentioned. In ACR Ahmet says that the Apple will lead him to the Grand Temple. Then the Apple leads Ezio to Desmond, Desmond to jupiter, who tells Desmond about a Temple where they transferred the results of their experiments. Isn't that enough to know what's going on.
