It sounds like a really cool idea. I would start with focusing on a time period, such as the crusades or the renasance, and dress as characters from that time period.

The problems I can see with this theme are

1. Some guests might not understand the mythology of the series, and parts of the theme might confuse them.

2. The whole point of the Templars vs Assasin's war is that it is a secret war. There isn't really a way to dress "like a templar." I suppose your husband could pick a notable Templar figure and dress like him, or wear something subtle that signifies him as a member of the templar order. Assuming you want to dress as an Assassin, you could wear a hidden blade under your gown. Just be sure to not to cause panic with it.

Anyways, it sounds like a cool idea, and you could make it work. Here's a few ideas I'm throwing out.

Matching rings that have the Assassin/Templar insignia on them.

Piece of eden centerpieces

a (faux) eagle feather used as a pen to sign the guest book.

That's all I got for now, but I'll dream up more ideas.
