Iran is my personal pick for an AC game given it's the earliest known whereabouts of the Assassins and Templars in the series, and because the scope of the Persian Empire could allow the player to explore locations as varied as Greece and Egypt (at some point the series really has to go international, and I'm sure if there's a game about the Napoleonic Wars London and Paris will both be locations).

Also, if Ubisoft portrays the Spartans it'd be a good chance to remind the public the heroes of 300 were actually monsters.
