Well actually it's implied in AC1 that Altair did in fact have a love interest prior to 1191 and that was Adha. It's also implied that he still had feelings for her when a scholar (Whoever he was, he looked like a Scholar) mentioned if he was still looking for Adha. We don't find out that Altair found another love interest until AC2 during which we discover this within his Codex.
