Whilst I would love an AC game in the early-mid 20th century (as it's my favourite period of history), I'm not sure it could work out entirely as an AC game. Sure, it could work as a stealth game, as Hitman and SplinterCell have, but just looking at your list for weapons, the sheer prevalence of guns and other non-melee weapons just shows how little emphasis there would likely be on the traditional AC melee combat. I'd say the latest period that would certainly be more melee than guns (at least in Europe) would be the revolutions in 1848, however my preference for ACV would be Ezio's time or earlier.
