Those are all stealth games. You can't compare AC to Dishonored, any Hitman or any Splinter Cell (yes, I played them all), because AC isn't necessarily stealth, but is open world hereas those others aren't really. And if stuff goes wrong in those three games, then you'll find yourself mostly shooting, turning it into a shooter anyhow.

And don't forget that emphasis on guns is something of the last 150-200 years. Before that, it was mainly melee combat. And that is a long period, even when not counting before the year 0.
