Victorian era would be perfect for AC3. The mist that comes from the Thames could be incorporated into the stealth gameplay (and personally i think the AC series should have more stealth in it, they're assassins...) The architecture of London would be perfect for free running and climbing and you could include Victorian villains like Jack The Ripper and Sweeney Todd.
