1. I suppose by this point, they can claim that Desmond has accumulated the skills of a "Mentor", which fits in with how they wore black robes. Then again, black could just be because they think it's stylish.

2. Probably to do with the "modern" theme, and that white grabs people's attentions. Then again, so does a guy dolled up in the equivalent of a full set of SWAT armour. I'd prefer it to be toned down to a dark grey instead of what's on show now.

3. I guess they had to grow his beard out, considering Ezio had a beard and that older Connor has what appears to be salt and pepper stubble, from one picture we can see. It could also be that people think it's "badass", but to me, it's just too try hard.
