Really? Only those? Actually there are more ways and some of the ways were present in every AC game so you should know what I'm talking about but there is at least one which is new to AC3 which you haven't mentioned.

And if you must know, its to insta-kill immediately after stunning. You could do that in AC3 but its only guaranteed to work(only when Jaegars are not involved) during a kill streak, using it normally is more of utilizing a glitch. In ACIV its part of the regular combat. I also noticed how in Storm's vid, he killed a Brute(don't know the ACIV version's name) while in combat almost effortlessly without starting a kill streak beforehand and I think its a trick you can learn to do.

Also in AC3 you could still kill people without triggering any animation what-so-ever. Just continue to hit them without initiating a combo and eventually you will just hit them and they will just fall to the ground like they did in previous games. I actually do that when I have just one enemy remaining. Just toying around with him while continuously barraging him with attacks until he is dead XD. True enough, it takes about 15-20 hits to do that.
