The Assassins in Rome when Ezio first recruited them. They didn't have a beak until they became a fully fledged member of the order maybe the Carribean Assassins took after the Italian Assassins seeing as Edward is not really an Assassin at first but a pirate who goes back and forth between Assassin's and Templars. So he is a recruit at the begining, but maybe at the end we get a Master Assassin outfit that has a beaked hood.
