We can no longer see the memories of Ed the moment Haytham is conceived so the only way to see him would be to switch to Haytham's perspective, however the fact that you can play as Adewale also comes into the picture and also since this is a different approach to the animus perhaps we can see some other method. Perhaps we play as a different character entirely that goes to meet Edward and then meets Haytham. There are various ways to incorporate Haytham into it. But since Ash said we will probably see him, it might be just that "we" see him, not the character we play as. Perhaps in a flashback of AC3?

I don't know, there are too many possibilities.
