No world wars. Both end with major failure for the Assassins. WW1 is the creation of Abstergo (I think), and WW2 is the creation of two Blocs, both ruled by Templars.

I would like it if these settings were featured from a templar POV, not Assassins.

As for Assassin, there can be China, Japan, India, England (We saw Reginald Birch didn't we? We could go beyond that), and so many other settings possible. Personally, I prefer some setting in Asia, where in Asia doesn't matter to me.

BTW, I think the reason they showed the Templars as more of the good guys was because:

AC1 showed it neutrally, 2 and Brohood were completely pro-Assassin, and showed Templars as evil bastards.

They are trying to even it out, make us realise that just 'cause we are Assassins in the game, we aren't any less fanatics than the Templars.
