Actually, I just finished Assassin's Creed II, and I think Rodrigo Borgia fits what I'm looking for, surprisingly enough. I actually dodged and countered a lot more during that first fight you have with him, back in Venice. If enemies like that were more common, I'd truely enjoy fighting, or better yet, take precautions to avoid it.
