Take into account that Altair was in the 3rd Crusade where Templars and Assassins have a small-scale "war", whereas Ezio was in the times when Templars and Assassins have gone into stealthier approaches, though as the guy above says, were actually further up in the sphere. By far, in combat, Altair has better chances, but in terms of stealth, Ezio is better and with style. Altair and Ezio kill anyone in their way anyway.
