There is one thing that i would like Ubisoft to bring back, DEFENSE BREAK from the enemies towards Ezio/Altair, it was cool in AC1 thinking that you had control over a battle guarding yourself with the sword and then BAM! a guard breaks your defense and strikes you, it made the game challenging.
