The Templars (in real life) were formed because the Saracens were conquering Europe. They were coming through the east, and through Africa into Spain. (Spain at one point was almost completely conquered). So yes, they WERE defenders. At FIRST. But they got carried away, as people are wont to do, and they fought more than just Saracens to try to forciby convert Eastern European pagans. The Saracens started the war by trying to forcibly convert others to Islam. When the King of France owed a lot of money he didn't want to pay to the Templars, he made up a bunch of crap to have them executed and dissolved. So the Templars weren't completely innocent, but they were started for good reasons and they did good works as well as bad. This next part is my opinion: They did more good than bad.
In the Assassin's Creed universe, the Assassins came first (Although their firstborn son was the first Templar, it didn't take long), and I assume they were important warriors against TWCB until they started working together.
