I personally don't mind what specific period of Feudal Japan would be done for an Assassin's Creed game. The Sengoku period be the most obvious. I still wouldn't mind seeing the Edo period like the said. For gameplay, loads of stuff can be done. We can have weapons like naginata, kusarigama, ninjato and of course a katana. For stealth they can introduce things like tekagi, which would be great for gameplay. And Tokugawa Ieyasu would make a good antagonist.
