1. The ring finger never needed to be removed to use the hidden blade. It was just done to ensure the commitment of whoever weilds it. However, when Altaïr became Grand Master, he decided that this was unnecessary and instead just had the new Assassins take a burnmark on their ring finger.
2. That particular building is supposedly somewhere in Italy, as various Italian signs are seen, but this is unconfirmed.
3. No one knows.
4. Assassins aren't good guys either, but they don't harm the innocents. The Templars' goal is noble, but the means by which they want to achieve it are not. They opress the people, sometimes killing them. And don't you remember what they did to the Doge in Venice? That was even just a distraction created by the Templars for Ezio.
5. No one knows. It is likely just an easter egg.
6. I think it's just a trademark thing for the series to distinguish itself from others.
7. We don't know who the Grand Master is. But it is likely Ezio took on that role in AC: Brotherhood as he commands the other Assassins.
