1) Ezio learned Turkish. He says "my Turkish is absurd" during the The Prince's Banquet, pointing that he does know Turkish but not very good. That's how he communicated with the Ottomans.

2) As Rebecca said in AC2: "The translation software is still a bit laggy. You'll probably catch the odd bit of Italian, sorry about that." The translation software isn't perfect, so occasionally a word is not translated, like "evet" or "bene".
