Well the Bible contains important historical events outside of its intended purpose, and the Old Testament was indeed that of Judaism. Islam is relatively young and thus not really relevant to the Exodus, or to Moses himself. 

I think a lot of people, myself included, have the understanding that AC Origins will contain Biblical history in some shape or form.
