It seems to me to be an American Assassin Tradition to not have a beak. if you look closely the only "American Assassin's" to have the beak were John de la Tour (who was really more of a envoy of the French brotherhood.) And Connor (and we really don't know the story of his robes, presumably made by Achilese but never shown in Rogue.) The only European Assassin's to come to mind that doesn't have a hood is Evie Fry. I don't know where these traditions arose from, that's just the way it is.
