We can only speculate - the fact that it has a European style could merely be for the reason that they wanted it to be sort of in line with Ezio's other outfits. I'm pretty sure Altaïr's codex actually confirms it IS the same armour; he had it made using the knowledge gained from the Apple, then hid it away cause he didn't want his enemies to find it and reverse engineer it, I believe. And then it somehow ended up in Italy.
