"new Modern Day protagonist, he's male and mixed race" If he's not a totally new character, the only one Assassin I can think about that could potentially fit the profile is Griffin.

"Should be set between 1400 and 1200 BCE, during the Dynasties." Akhenaton or Toutânkhamon ? Akhenaton's reign was a period of reforms and turmoil, it could perfectly fit an Assassin's Creed game...

"The protagonist (in the past) doesn't have a name at the beginning. Later, other characters start calling him “Shed”, after the deity that represents salvation. A big part of the story revolves around saving your people from slavery." Why not... I searched on wikipedia to learn more about Shed (deity) and it seem pretty cool.
