Fairy - The outfits which were distinctly wore at that point in time are forced on you for specific missions e.g. disguises. It wouldn't make sense to have Ed change his outfit every in-game day, because he would have most likely done that. Also, people's styles change over time. Changing it yourself would make the memory too messed up. Like not having Connor have his hair shaved on both sides at the end of AC3.
