I'd say it's better to mention that the guy's name was Giuliano, so there doesn't need to be "Cardinal" in the dialogue section, though I doubt that it's Giuliano della Rovere, since he's an ally to the Assassin Order, and I don't think he'd go along with trying to kill Copernicus if Ezio was protecting him. Cardinal Giuliano?

I'd say it's better to mention that the guy's name was Giuliano, so there doesn't need to be "Cardinal" in the dialogue section, though I doubt that it's Giuliano della Rovere, since he's an ally to the Assassin Order, and I don't think he'd go along with trying to kill Copernicus if Ezio was protecting him.
