Saracens refers to the Sunni Muslim armies, led by Saladin, involved in the Crusades (although it can be used to refer to Muslims or Arabs or Turks in general). During the Third Crusade, Saracens were defending the Holy Land from the Christian Crusader invaders, who wanted to reclaim it in the name of Christ.
Although the Crusaders had achieved a few victories (most notably the retaking of Acre), most of the Holy Land was still held by Saracens. The lands to the east and south-east were Saracen strongholds, and they occupied and held the cities of Damascus and Jerusalem.
Salah Al'din

Salah Al'din, the leader of the Saracens, was never met by the Assassin Altaïr Ibn-La'Ahad, however, he is referenced by preachers in Damascus as well as Richard I of England.
Soldiers

Saracen soldiers were similar to the Crusaders in terms of combat. They spoke Arabic and Turkish, and wore Lamellar armor.
Low-Ranking Soldiers
The most common Saracen soldier, a low-ranking soldier, could not grab nor could he perform counter attacks. The weakest foe, he would easily fall to a single counter attack from Altaïr. Low-ranking soldiers tended to be frightened the most in battle, fleeing if a few of their comrades were killed.
High-Ranking Soldiers
High-ranking soldiers of the Saracen army had much more armor and skill. Uncommon in appearance, these soldiers could perform both counter attacks and grabs. Altaïr could counter their attacks however, this would only push them down, not kill them outright. However, a counter using the hidden blade would immediately kill them.
Flags
The Saracens had spread 100 Saracen flags across the city of Damascus. Collecting them all will, in the Xbox 360 version of the game, grant the player an Achievement:
