The Arsuf plains are the location of the penultimate level of the game. You can only enter Arsuf for a short while, for the end of the game. As Altaïr enters the area, Crusaders and Saracens are engaged in a major battle. Here, after slaying several groups of many soldiers, both Crusader and Saracen, Altaïr is finally able to confront Robert de Sable in a final battle to see "which side God favors" according to King Richard who watched the fight. While at Asurf Altair fights many crusaders and saracen even while in his final fight with Robert. It is also here where you are told that Al Mualim was a templar the entire time and used Altair to kill off the other templars so that he could have the Piece of Eden for himself which does infact turn out to be true in your fight against Al Mualim.
