Saracens refers to the Sunni Muslim armies, led by Saladin involved in the Crusades (although it can be used to refer to Muslims or Arabs in general). During the time period revisited in Assassin's Creed, Saracens are defending the Holy Land from the Christian Crusader invaders, who seek to reclaim it in the name of Christ.
Although the Crusaders have had some victories (most notably the retaking of Acre), most of the Holy Land is still held by Saracens. The lands to the east and south-east are Saracen strongholds, and they occupy and hold the cities of Damascus and Jerusalem.

Saracen soldiers are similar to the Crusaders combat-wise. They speak Arabic and Turkish, and wear Lamellar armor.
