Saracens refers to the Muslim armies (led by Saladin) involved in the Crusades (although it can be used to refer to Muslims or Arabs in general). At the time revisited in Assassin's Creed. Saracens are defending the Holy Land from the Christian Crusader invaders, who seek to reclaim it in the name of Christian.

Although Crusaders have had some victories (most notably the retaking of Acre), most of the Holy Land is still held by Saracens. The lands to the east and southeast are Saracen stronghold, and they surround the cities of Damascus and Jerusalem, which are also Saracen-held.
