The Olivier thing is probably the closest we'll get to a Watch_Dogs/ Assassin's Creed crossover.

And as for the US Civil War or Old West there is still potential, or did they announce they weren't doing those?
The California Gold Rush was part of one of the comic books and in AC 4 Lemay talks about doing research into her own family back in the Civil War.
AC 4 and Rouge prove they could make games that take place before other eras they've done.
As for my AC ideas that probably wont happen: WWII and the Cold War. 
I also liked Darby McDevitt's idea of what I call AC Joy Ride.
he did an interview with loomer, one of his Assassin's Den interviews. And he talks about the player being a kid and breaking into Abstergo and playing around in the Animus in different time periods.
