Why was Desmond's body left behind for the Templars to find?
Shaun, Rebecca, and William (his own father), knew where to find him, but they left him.

They knew the Templars were using DNA to research the assassins and search for information on the first civilization. They should not have left his body (a huge source of assassin DNA) for the Templars to find.
Desmond's phone had assassin intel (things he learned while in the animus, assassin training, first civ information) on it, and they left that too.
