It may have to do with how he's more of a predatory Assassin than the previous two, not having been born into the Order to have been influenced by it in some way.
It could also be that they're focusing less on names to symbolise the eagle, and more on creating a diverse crowd of characters.
Then again, the Eagle has been a symbol of America for a long time, so maybe that Connor is the "eagle" that the beliefs of the American people are built on, due to his quest for justice and to remove tyranny, considering that he helps George Washington and other Americans in the American Revolution.
