I've already told you about the weapons, so here's the rest.
Hunting is fairly straightforward, as long as you time the QTEs properly and have patience when you need to be stealthy. Remember, running after the animals is never a good idea unless you plan to shoot them, which results in a bad kill (damaged pelt/etc.)
Naval Missions were fun, though I suck at them. I liked upgrading the Aquila though she's waaaaay too fast for an 18th Century vessel. Use the swivel cannons often, they're your best friend.
Combat has got a revamp. You can run out of combat whenever, hit X on the PS3 to break defense or use a Human Shield. You counter with circle and during the counter, time slows down and you can hit circle for a throw, square for a kill, x for a disarm and triangle for a tool kill. Besides that, you can chain kill like the previous games, though there's no turtling (holding down counter puts you in a parry stance).
