There will probably be less weapons with Connor than we had with Ezio, 6 to 8 is a good guess. We'll be able to dual-wield many combinations of weapons though so combat should be just as variated. Remember Connor will also be able to unlock new weapons we havent seen in trailers yet, like the sabertooth sword in the Mayan Ruins mission.

Connor will definetely be able to swim. There will be lakes and rivers for him to cross. He will probably not be able to swim in some areas, since Ubisoft has said that new areas will be unlocked only when bodies of water are frozen during winter. Other features like the gondola have returned, so I assume swimming will definitely return.

The clubs will probably be like factions, because they assign missions and tasks to Connor to complete, like the hunting club will ask him to hunt a rare animal. Differnetly from the factions, Connor will have to work his way into a club.

Ubisoft has said next to nothing about Desmond's story, apart from it being the conclusion of his story. He will probably be visiting Connor's memories because his ancestor will have very probably found the Grand Temple during his lifetime, and Desmond and his team will have to find out how to get in. He will definitely meet Daniel Cross at some point, because he was assigned to assassinate William.

Viewpoints will return like normal in the cities, while they make their appearance in the Frontier as large trees which provide Connor with an extensive vantage point.
