Feudal Japan would be awesome. It has all the makings of an amazing setting - Nobility fighting for the future direction of a country, political conflict and unification; Religious conflict between Buddhism, Shinto and Christianity; the arrival of European traders and technology - gunpowder; the existence of the geisha and ninja guilds; the skills and approach of the samurai, plus a unique feel that would lend itself well to the graphics and style of AC.

It even has certain mystical objects today (http://en.wikipedia.org/wiki/Imperial_Regalia_of_Japan) which might well be pieces of eden... How you crowbar Templars into this I don't know but as they existed in China, it is very possible in Japan as well.
