At the end of Assassin's Creed: Brotherhood, a Phrygian Cap and a Masonic Eye are mentioned. They appear on the Declaration of the Rights of Man and of the Citizen of France, which was approved in 1789.
As AC III seems to end in 1783, I think it would make sense to have the next AC during the French Revolution (with Connor crossing the Atlantic).
